Rhubarb Sauce

Cut leaves and discard safely... they are poisonous. Wash stalks and cut into half inch lengths. Add half a cup of sugar for each quart of raw stalks and place in enameled pot for at least 4 hours to draw out the juice. Heat to boiling, and boil for 1 minute stirring occasionally. Remove from heat an let cool.

The is the true sign of spring! One must have this and rhubarb pie to begin spring properly!
