Country Stirfry
- 3 garlic fragments sliced
- 3 tablespoons olive oil
- small amount of pork loin thinly sliced
- water to cover the bottom of the wok
- 3 cups fresh green beans whole
- 3 small red potatoes sliced in 1/8 inc slices skin on
- corn sliced from 3 ears of fresh sweet corn
- basil and parsley to taste
In a suitably sized wok or skillet saute the sliced garlic.
When it begins to brown, remove the garlic slices. They flavor
the oil. Add the pork and cook until it turns white. Add water
and green beans and potato slices. When the beans turn bright green
and begin to soften, add the corn and spices. Cook 3 more minutes
and serve with cooked stewed tomatoes.
This is enough for two adults. Scale accordingly.
