Summer Applesauce

Apple sauce takes little work. This is my grandmother's recipe. She always made chunky applesauce which was my favorite. You have to peel the apples and remove the core and seeds. Place the apple slices in a rounded glass dish, add enough water to leave the top layer or two out of water, add some sugar, cover and microwave for 8 minutes on high. Stir and microwave for another 5 to 8 minutes. You do not want the slices to disintegrate in the cooking process. I use a dough cutter to break up the slices. Cool and serve. Makes about 4 cups.

Early Harvest apples are the best, but you can use any summer apple. They all tend to be tart. The alternate way is to just cut the whole apples into eights, add water and sugar and cook it well. Then use an apple stainer which will push the apple sauce thru, but keep all the seeds and skin. This is quicker, but without the wonderful texture of chunky applesauce. Don't be lazy!
